Lucrezia Marinella's Non-Traditional Polenta Balls



Lucrezia Marinella liked things a bit different than what Italian patriarchal standards would have desired. This is a recipe for polenta balls that does not follow Italian tradition but will enchant you. I usually make fried balls/burgers with ingredients like oats, lentils and veggies but a friend of mine inspired me by using polenta and getting really nice results. I had no clue how that was made but just experimented a bit with what I had at home, which wasn't much: polenta and sweet potatoes.

Ingredients

1 cup “instant” polenta
200g sweet potatoes
1-2 cloves of garlic
Herbal spices such as basil, oregano or thyme
Pinch of baking soda (optional)
Vegetable oil


Instructions

1. Boil the peeled sweet potatoes until soft (as if you were to cook mashed potatoes!).

2. Bring 3 cups of water to boil in a pot. Whilst stirring, slowly pour in the polenta. Keep stirring and boil gently for another 1-2 minutes. Then take the pot off the heat and pour the polenta in a bowl. Wait 15-20 minutes until it is cool.

3. Add the sweet potatoes, finely chopped garlic, spices as you like, salt and a pinch of soda (if you like, to make the balls rise a bit). Mix until you obtain a smooth paste.





4. Make small flat balls with your hands and pan-fry them in either little oil or slightly more depending of how you prefer it. I tried both, and more oil is unhealthier but tastes better!





Tip: I used sweet potatoes and it was a great choice, but other veggies will also work and probably even better as they will make it lighter.
